We all have that one recipe in our family that everyone loves and makes for their family when they have one. I was young living in San Jose with my mom, and coming down to Watsonville to see my dad on the weekends. Every Sunday my brother, dad and I would have breakfast at my Grandma’s house. She would always call me the Friday before to ask what I wanted special for her to make. My answer was always, "Mrs. Arkansas cake." It’s a cake my Grandmother’s mom made for her. I’ve heard it called a few different things, like Okie Coconut Cake, or Coconut Candy Cake. We have always called it Mrs. Arkansas cake. Anytime I’ve ever made it for anyone, they end up loving it and ask me make it over and over again for them. Its sweet but not too sweet, once you’ve had a piece you’re coming back for more. The cake is pretty easy to make, but the last step is the most important. First, you want to preheat the oven to 350 degrees. You will need 1 mixing bowl, 1 cereal bowl, a mixing spoon, measuring spoons, measuring cup, a 13"x9" cake pan, a small cooking pan, and not be afraid of getting a little sticky. You’ll need 2 sets of ingredients, one set for the cake, and a few other ingredients for the frosting. Usually you will get the frosting ready while the cake is in the oven. For the cake you gather 2 cups of 3 minute oats, 1 and a 1/2 cup of water, 1/2 cup of butter, 1 cup of brown sugar, 1 cup of white sugar, 2 eggs, 1 1/2 cups of flour, 1 tsp baking soda, 1 tsp. of cinnamon, 1/2 tsp. salt. Boil the water in your small cooking pan and pour it over the oats in a cereal bowl and set aside. Add in all the other ingredients to a large mixing bowl and stir well. Then add in the oatmeal mixture and mix well by hand. Grease up your cake 13"x9" cake pan and spoon in all the mixture.
