As the sun creeps over the horizon cooks wake up to iron their cook whites, brush their teeth, shine their boots and head out the door at 0430 am for another long day at the Dining facility. Cooks feel as if there is nothing more to this mos other than working in the Dining Facility. There are a lot of talented Cooks that have the passion for Culinary Art within our working environment. But, many people do not know about this Culinary Building . In this building Cooks within JBLM train to learn new skills, to get better in their skills and also to train in The Military Culinary Art Competition. Being in this building will get you into a lot of places other than the Dining Facility. Sadly, Cooks walk, drive, even run pass this building and not know the opportunities that are given within. The Culinary Building in JBLM, Wa give Cooks the opportunity to learn new set of skills or to even improve in them. Skills such as; knife skills, chicken fabrication, scaling a fish, skinning a fish, storing fish, pastry cream, tart dough, to even learning basic cake decorating. Knife skills, learn how to hold the knife and clean the knife. Chefs would teach Cooks how to cut a carrot into a juliet or tourne a potato, which I can say takes a very long time to master. Chicken fabrication, taking a whole chicken and skillfully removing the wishbone, legs, thigh, breast and even the whole backbone. Taking a whole fish and removing the scales, skinning the fish without leaving big chunks of meat behind on the skin, also taking the eyeballs out of it. Not only are you training to better yourself, you’re also learning things that would be trained on if you made it on the Culinary Team. Even if not on the team, these learning experience is a benefit for the future of soldiers culinary career because what is learned in these training can be carried on into the Dining Facility.
